Ummm, what can I say about shami kebabs...They're DA BOMB. Most Pakistani families grew up eating these with just about anything and nothing. Sometimes they're the protein add to your meals, sometimes they're your burger filling, and sometimes you just serve them on their own with chai. I especially love to eat shamis with biryani, khatti bhaji, paya, and bun kebabs. Ok, I love them on their own too but I can't bear to do that if they're from my own stock because each kebab is so preciously valuable! Fact is, they're a bit of a process to make, and it feels hard to find the time. Everyone used to make them back in the day, and most of the older generation still do. I grew up helping Nanu make these...still do...though less and less, I must admit. To be perfectly honest, I've never actually made shami kebabs on my own - Nanu basically makes them for us when she comes to visit. But I hope to finally start making them one day - with my bachay helping out of course! Don't let the effort put you off - they are so worth it. The best part is that you can just make them in a big batch and freeze them for party days, rainy days, and everything in between! PS. These pictures really don't do them any justice. PPS. Shamis are usually flat and round but I just had to showcase this flat diamond shape. This is how Nanu used to make them because that's how my Nani (Ammi) used to. Apparently it’s a Madrasi ‘ting. So felt very nostalgic when Nani made this shape, I just had to take a pic!
