Spinach and Mushroom Casserole
This recipe is credited to "Two Peas in a Pod," written by Maria Litchty Notes: This recipe can be cut in half and baked in an 8x8 pan or a whole in a 9x13 pan. The Recipe calls for "milk", so I use what I have on hand, usually oat or almond. I substituted feta for goat cheese. you can use whatever cheese you have on hand. it is ok to pre-mix your raw eggs and milk and leave the mixture in your fridge overnight until the next day.
