This has been a frequent comfort food meal we make, but during “Shelter In Place” / “Flattening the Curve” times it became a very regular meal in rotation! It's a simple and versatile red sauce that we refer to as BEEFY MAC when combined with bite-sized pasta. Our inspiration for Beefy Mac was Chef Boyardee Beefaroni, a childhood favorite, but this isn't anything like Beefaroni. This is meant to be easy to cook, easy to eat, comfort food. It is unlikely to be considered authentic in any category of cuisine by anybody that knows what they're talking about. It might even make Italians mad, but they probably should be mad.

Ingredients

1 pound ground beef (80/20 or 85/15)
1 medium onion, diced
1 can whole tomatoes, 28 oz
