Spätzle is a classic noodle side throughout Germany, but in Bavarian and Swabia, it is a "food group." Every cook has their own take on with cheese, speck (bacon on steroids), ham, vegetables, caramelized onions...the combinations are endless. Only rule: Do not overcook the Spätzle. Have fun making these little noodles and "dressing" them up. In this case, "play with your food." Note: Cooked spätzle can be kept for about 1 week if kept immersed in water and refrigerated in a sealed container.
