The first time I tried this was in Monterrey, Mexico, many years ago, which I believe is originally from there or at least from the north of Mexico. It’s called Discada because it’s made in a Disco (a metal Disc in a wok shape but broader). It’s made with all types of meat, and over the years has changed in every region, but what hasn’t changed is the beer, that’s the central ingredient and what it gives that characteristic flavor.
