A great standalone start to the day - or an awesome savoury addition to an exquisite brunch spread. The classic dish is actually known as: Tortilla española. But in Spain, the word “tortilla” does NOT mean the thin flatbread used in Mexican food. Instead, it means a thick egg dish made with potatoes, olive oil, and onions. This recipe was just barely adapted from Karina. I need to find the website.
