Smoky Cauliflower Steak with Romesco
Cauliflower, though humble and pale in appearance, is a cruciferous vegetable with nutritional benefits comparable to kale's. And its architecture gives it another superpower: making a vegetable substitute for steaks. Its mild flavor is also a benefit, making it a best supporting actor for flavorful sauces, including romesco. This recipe seasons the cauliflower with garlic powder and smoked paprika, to mirror the flavors of the accompanying romesco.
