There's nothing like a hearty hot bowl of soup to warm up with, for when you are sick as a dog or whenever you need a grilled cheese to do a slam-dunk into a luscious bowl of tomato soup, DON'T go for the canned stuff! Make it from scratch! This is such a low-budget soup that everyone can make and the best part is that YOU are in charge of how much seasoning you want! I wrote this with a vegan approach because quite often, this keeps the soup extremely light and it still holds amazing flavor! Make it vegetarian with a parmesan rind in the soup base. Shake some freshly grated parmesan in your bowl! Add some freshly cooked pasta for a tomato-mac attack! Consider bulking this up with your choice of meats, vegetables, and rice for a complete meal! 1 1/2lb Tomatoes, washed, cut into chunks or slices
8 oz Onions, sliced
3 oz Garlic, sliced
