Gourmet Brioche Burger with Fig and Onion Jam
This burger is about letting good ingredients shine and a play on sweet and savoury elements. The patty is nothing more than freshly ground beef, shaped and seasoned simply, so the flavour stays clean and natural. The buns are a hybrid of shokupan and brioche, baked with tangzhong for softness and finished with nappage for a gentle shine. The build is completed with onion jam for savoury depth, fig jam for sweetness, truffle goat cheese for earthiness, and rocket for freshness. See additional notes below. Difficulty – Intermediate
