Dark Chocolate Mousse Cake is a super moist dark chocolate cake, that combines unsweetened natural cocoa powder and dark cocoa powder for an extra rich flavor. Using organic bread flour which contains higher protein levels, the dough results in a higher rise and more open crumb. This is very important when making cake batter as the cake needs to be strong enough to handle the weight of real chocolate (cacao beans) and develop a proper gluten structure to support it. Fill the cake with a simplified chocolate mousse and cover it with semi-sweet chocolate ganache. If needed, you can prepare the ganache and mousse ahead of time.
