Buffalo sauce and blue cheese dressing are a pairing that are as old as time itself (no really, there are caveman paintings depicting our ancestors making humongous amounts of buffalo wings and blue cheese dressings for celebrations). Just kidding, obviously. But it's an amazing match. Spicy meats creamy and fatty, with a bit of funk to create the ultimate party in the mouth. This dish combines those familiar flavors but in a completely different form. Crispy rice is a blank slate of texture waiting for its flavorful friend. That would be a buffalo mushroom duxelle topping and a delicious chive-blue cheese dressing. It's a wonderful pairing of flavors and textures alike.
