El Lomo Wellington es un clásico de Reino Unido, pero ya que es un corte que está bastante caro, decidí ir con pechuga de pollo para hacer una versión individual y más económica. Aunque tranquilamente también se podría hacer con Solomillo de Cerdo! La clave acá está en lograr un buen punto de cocción de la pechuga! Que esté bien cocida, por supuesto, pero no de más, que no se te seque POR FAVOR!
