My sister, Aviva, is pregnant (it's a girl!) and her biggest craving throughout her pregnancy has been onion rings. I'm trying to win over my niece as the favorite, and I figured that cooking for her might help my case! Women are notorious for craving 2 things during pregnancy, food that’s fried, and pickled goods. So, I’m combining the two and making dill pickled onion rings. I served it with a banging dipping sauce–I even pasteurized the eggs for the mayo! Aviva LOVED it, and so did my niece because she started kicking as Aviva crunched her way through the entire plate.
Ingredients
2 large Spanish onions
2 cups white distilled vinegar
2 bulbs garlic, separated into cloves, skins removed
