Farro is one of the most nutrient dense favorite grains out there. Super high in protein and fiber. And, it's delicious! I love the nutty flavor and toothsome texture. It's perfect as a side with proteins, but I think it really shines in salads, where they add much-needed heartiness. I show you guys my favorite way to cook it here: with caramelized onions and mushrooms, whose sweet, deeply savory flavor complement the farro beautifully.
