Veal Parmigiana with Cherry Tomato Reduction Burrata and Fried Basil
This veal parmigiana is served with a rich, sweet-and-savoury cherry tomato reduction, topped with fresh burrata, and garnished with fried basil and a drizzle of spicy chilli oil (both optional). It pairs beautifully with polenta fries (see side dishes) or, for a simpler option, a fresh salad to balance the dish. The recipe can be prepared with or without the bone. While the bone adds a striking visual element, it’s not essential. If you choose to keep it, be prepared to clean and scrape the bone thoroughly for a neat and professional presentation.
