Introducing my delightful Summer Apricot Tart: Buttery vanilla pastry shell filled with poached apricots infused with vanilla, orange, cinnamon and lemon peel. The luscious filling is complemented by apricot jam and a decadent vanilla mascarpone cream. Topping it off, we have an apricot gel infused with apricot liquor, a refreshing lime and mint gel, and a touch of vanilla white chocolate. To complete this masterpiece, I have served it with a meringue ice cream alongside verbena leaves to give it a fresh and zesty touch.
