Chicken Scarpariello (or Chicken Scarp) is by far my favorite dish. Juicy chicken mixed with a sweet and savory sauce made from Italian sausage, sweet onions, hot cherry peppers, and a little vinegar to bring it all together. Depending on where you go they'll either serve it chicken breast, thighs, or wings. So really, it could be a hit or a miss. But where this dish slaps all the time, is with Chicken Cutlets. Yup, you heard me right! Make your favorite chicken cutlets in one pan, then make the scarp sauce in another pan, then plate and combine the two together.
