The easiest way to cook fish? Poaching. This is a method where you gently cook something in a liquid or sauce. The result is the moistest, most succulent salmon you've ever had. Plus, you don't have to deal with all that splatter and stink up the kitchen. Here I poached the salmon in a spicy tomato sauce that punches above way above its weight in flavor. Throw the salmon in, cover, and cook over a medium heat for 8-10 minutes. In the meantime I whip up this quick green sauce to keep things bright and herby–lots of dill cilantro, parsley, chives and capers for brininess. I like balance that with some extra cumin and coriander for warmth. It’s kinda like a Mediterranean chimichurri and it’ll complement our fish beautifully.

1 lb skinless salmon filets
0.5 cup olive oil
0.25 cup finely chopped cilantro
