The result is crispy on the outside, soft and fluffy inside. Perfect as a snack or served as a side with breakfast or dinner dishes. This recipe yields approximately five 75 g portions. You can make smaller portions if you'd like to increase the quantity. For best results, freezing is recommended, though semi-freezing can also work if you're short on time.

600 g potatoes (such as Celtiane or Russet), peeled and diced into small cubes
1 % white vinegar (based on water weight)
3 –4 tsp potato starch or cornflour
