DISCLAIMER: this recipe was made using an instapot. Once I realized how incredible efficient an instant pot was I started designing meals around it. THis is the easiest and most delicious way I have ever made a full chicken, and if you're looking for an excuse to buy an instapot, this is the recipe for you. On top of the chicken, I made some seriously delicious and easy roasted smashed potatoes and some sauteed lemon kale!
