Ok yes, I used romanesco, not cauliflower... but odds are you will likely have an easier time finding cauliflower than romanesco. So either way it's fantastic! And YES! You can make this even if you don't have sourdough discard. It's best served alongside some steak or roasted chicken.

4 tbsp butter
0.5 cup sourdough discard (or 1/4 cup flour and 1/4 cup water/broth/whey if you don't have discard)
