This is the Mexican version of the French bread. Bolillos are used for sandwiches/tortas and other foods like capirotada or molletes. In some regions, it is stuffed with cream cheese or queso fresco with a kick of pickled jalapeño. One thing for sure is that these are way better when they are fresh out of the oven.
