"cheddar" and Chive Irish Soda Bread
Happy St. Patty's Day (almost)! Did you know that leading up to this holiday, the Irish would prepare by making Irish Soda Bread? It is a quick and easy bread. No knead. No rise time. The Irish would make it when low on resources. I think it is an amazing option for people who don't want to wait all day for their bread to bake. It is a hearty and thicc bread that is perfect for soups or stews. The best part of this bread is you can get creative with it! I used cheddar and chives for the add ons, but you could add anything: rosemary, dill, goat cheese, sage, the world is your oyster! I was able to make a vegan version of this bread, but you can make it with regular dairy/eggs. Do whatever you want. As long as you are enjoying this recipe, I am happy.
