I've used a smoked Thor's Hammer for this recipe because I was going all out. You can just as easily use beef shin that has been cut down into smaller pieces - the ones that you're more likely to see at your butcher - and not smoke the beef at all. You can brown the meat off first in the pan with some oil, take it out and make the ragù then put the beef in the ragù to braise as it cooks. I do this when I want to make a regular lasagna. 2.25 kg Thor’s hammer or beef shin joint
20 g Mediterranean rub
250 g beef stock
