One Pot Korean Rice Cake Soup Ddeokguk
With Lunar New Year 2025 just around the corner, I'm back with a cozy soup recipe that's enjoyed during the occasion. Back in the days in South Korea when everyone got a year older as the new year began (now that has changed and you get a year older on your birthday), having a bowl of Ddeokguk symbolized just that, marking the start of the year with another year of age (hopefully) a little wiser;) This is a simplified version that takes under 20minutes of total prep and cooking time and you just need a single pot! But it's still packed with flavours and will make you feel like getting a nice warm hug to start the year off. It also contains over 30g of serving per protein as one of my New Year's resolutions is to get stronger by building more muscles. So my recipes will focus more on serving a good amount of protein per serving! Many Koreans, myself included, enjoy this soup all year round since it's delicious! You can get creative with the type of ingredients you add to the soup along with the rice cakes. Follow along the recipe below and enjoy!
