A vodka-sauce-like pizza with a twist: a sauce made with sautéed shallots, crisped prosciutto, white wine, butter, cream, and Sicilian oregano, topped with low-moisture mozzarella (pre-bake) and stracciatella, sauce, fresh basil, and cup-and-char pepperoni (post-bake) on a sourdough sesame seed crust.
