My new favorite way to eat chicken parm. The creamy, slightly spicy vodka sauce is unbelievably good with this. I highly recommend finding high quality tomato paste for this and don't substitute "parmesan" for parmigiano reggiano. Get the real stuff, it makes a huge difference. Also, it's expensive but if you use fresh buffalo mozzarella it may just change your life, cuz it did mine. I've never had such melty, soft fresh mozzarella. Can't wait to make pizza with it...
