This is a very adaptable recipe. I have tried it with kale instead of bok choy, added baked tofu, added cashews, with lime and without lime, with fresh and with powdered ginger. Whatever I’ve done, it’s always SO GOOD.
Ingredients
1 c rice, long grain or basmati
12 or so big leaves of bok choy, stems separated from leaves and chopped separately.
2 cloves garlic, minced
