This strawberry cake features layers of vanilla white chocolate cream, almond sponge soaked in strawberry-vanilla syrup, a strawberry-raspberry jelly centre, whipped vanilla double cream, and fresh strawberries. What’s great is that it can be assembled step-by-step and even adapted into smaller, individual versions. For this recipe, I used an 18cm cake ring (6cm in height) along with an 8cm-wide acetate roll for lining. This helped create a taller edge, making it easier to build and complete the cake neatly.
