Roasted Beets (my Mom's Recipe But Less Effort)
This is a lower effort version of the roasted beets my mom makes. Her recipe requires the beets to be wrapped in tinfoil individually. Here instead we chop the beets then bake them in a dish with foil on top. My partner says these taste just like the beets he used to have at one particular restaurant in Hong Kong growing up! This is great for meal prep as a side dish. This recipe lasts my partner and I one week. Total cost: $14 (beets can be pricey! - I actually made this the other week for about $5 because I found a huge bag of beets on sale, but that is not an every day occurrence!)
