Store in the fridge! Lasts weeks! Feel free to use sugar, but I rarely use sugar in my cooking. For any sweetener, I use maple syrup, honey, dates, or any natural sweetener than is lower on the glycemic index. Also, maple syrup will add a touch of colour to the pickles.
