pollo-pibil
Pollo pibil is like cochinita pibil, but that’s pork from Yucatan, Mexico, and traditionally is cooked underground in a whole and wrapped on banana leaves. It was very smart using the Schlemmertopf (glutton pot), a German clay pot I found at the thrift store, but you can use any pan to bake it and even wrap it in foil; the importance is to wrap the chicken on the leaves and slow cook it, so you can even cook it in the slow cooker or a pressure cooker as long as you wrap it on banana leaves, these will give a delicious and characteristic flavor. 8 oz achiote paste (anatto seeds paste)
1 onion (reserve 1/2 to put inside the chicken)
1 whole chicken
