Kolokithokeftedes are a Greek recipe with courgette and feta. This is a unique recipe for me, I lived almost a year in Crete in 2014. I remember the Greek taverns and the fantastic food they have. I used to eat these kolokithokeftedes together with Tzatziki. So crunchy outside, but so fluffy inside. With the freshness of the mint and the distinct Feta flavour. The name kolokithokeftedes comes from “Kolokitho” meaning squash more generally. “Keftedes” means meatballs. These zucchini bites are entirely vegetarian. This recipe is a great recipe to do with your kids because they can get to know better how to use the grater. Kolokithokeftedes are an excellent option for your kid's lunch boxes too.
