Sweet corn tossed in a creamy, tangy dressing with lime, heat, and lots of cheese- it’s fresh, a little messy, and perfect for sharing. It hits all the right notes: sweet, salty, spicy, and citrusy. It’s simple, crowd-pleasing, and honestly one of the easiest sides to throw together.
