This is for all my fellow eggplant lovers out there! The pan-fried half-moon shaped eggplants are soft and pillowy inside while on the outside, it's coated with slightly sweet and spicy chilli sauce. The toasted cashew nuts add a nice crunch to the soft texture of the delicious eggplant. I served it up with fresh brown jasmine rice and it was perfect! Ready to start making?
