skillet-cake-(aka-rubber-pad)

This is an old family recipe. It seems super simple, and sometimes it is, but not always. It's a sweet cake made stovetop in a skillet. It has a crispy exterior and a soft, dense interior. It was known in our family as the Rubber Pad. You can elevate it with fruit and toppings, but it is also delicious, sliced in half with butter melted on it. It was ALWAYS a breakfast food, but it can easily be transformed into a dessert.
