This sweet corn recipe features a heavy dose of salt by way of miso, taking it into the territory of salted caramel. If the corn cookie portion feels like too much work, you can absolutely skip it and end up with a great outcome! If you have a "standard" ice cream maker like mine that has a drum that needs to be frozen, make sure that you freeze this drum at least 24 hours before attempting to churn for best results.
