Pistachio Pesto Pasta with Salmon Tartare
A dish you make when you want to impress someone!!! Bright, nutty, and a little elevated, but still so simple. This is one of those pastas that feels a little fancy, but is actually super easy to pull together. It feels elevated, fresh, and perfect when you want something a little special (but easy). You’ve got a creamy pistachio pesto tossed with pasta, finished with a fresh salmon tartare that’s lightly dressed with lemon and olive oil. It’s rich but still bright, and the textures are everything: silky pasta, crunchy pistachios, and that clean, delicate salmon on top.
