If you've never had the privilege of enjoying a cold mango lassi on a hot summer day––pause & reconsider your life. It's one of the most refreshing beverages I have ever tasted: it's creamy with just enough sweetness & a touch of cardamom. This recipe is inspired by the Indian classic & mashes it up with Hong Kong-style French Toast. The result is idyllic. Despite how it looks, it's very well-balanced. Not too sweet & has palatable richness thanks to heavy cream––a stand-in for the typical yogurt in a traditional mango lassi. I did the very most with this recipe. It features two mini recipes: the first is a mango cardamom cream sauce––I enjoyed it served cold over the freshly fried french toast stack; the second is a mango cardamom cream cheese spread which serves as the filling. Keep this recipe in your back pocket for the next sweltering day for ultimate enjoyment.
