One of my favorite ways to cook chicken thighs is also the simplest and easiest. You just need some salt and some time for a crispy, succulent result. I used that gorgeous liquid gold, AKA chicken fat, to make a ginger-scallion oil to elevate the chicken to new levels. All that's needed now is something cool, crisp and light! That can come in the form of the slaw I provide here, but other great options would be pickles, lemony cucumbers, or kimchi.

2 inch knob of ginger, grated
2 scallions, finely minced
