Sweet and Sour Chicken Sandwich
This sandwich was inspired by some sweet and sour fried chicken we had at a restaurant in Portland. EEM, in Portland, is Thai/Texas BBQ fusion joint that had us shook by how good it was. We had White Curry with Brisket Burnt Ends, Green Curry with Crispy Pulled Pork, and the Sweet and Sour Chicken as an appetizer. Since that day, two weeks ago, my wife ahs been mentioning it just about every day, so I had to make that happen. The sweet and sour sauce is a pretty basic one, with the usual vinegar, ketchup, and brown sugar. I add fresh garlic and ginger, and the fish sauce and cilantro for a little Thai taste. The peanuts give it a nice extra crunch, and the bitter/tangy slaw, cuts through the sweetness of the chicken. As for the chicken, I double fried mine to give it an extra crispiness, but you are free to fry it once if that is your preference.
