Este plato es un homenaje a la rica herencia culinaria del norte del Perú. Por un lado, tenemos un ceviche "con toque de jora", donde el pescado fresco (charelita) se marina rápidamente en jugo de limón, ají limo picado, cilantro y cebolla roja, con ese secreto norteño de un chorrito de chicha de jora. Se acompaña tradicionalmente de zarandaja sancochada. Como contraste perfecto, servimos las tortitas de choclo: frituras dulces y saladas hechas de maíz tierno rallado, cebolla y un toque de ají amarillo, doradas por fuera y suaves por dentro.
