Lately, I've found myself dropping superlatives without a second thought & when I say this is the MOST tender, creamy pork –– there's no question about it. Maiale al Latte is a traditional Italian recipe featuring two main ingredients: pork & milk. At first glance, the combination may seem a bit offputting to the average foodie but it's magical. A low & slow braise transforms the milk into a flavorful yet mild sauce while the pork breaks down to a tender, melt-in-your-mouth treat (thank you lactaid). Some of the ingredients I incorporate into the milk bath aren't typical but embolden the overall flavor. You'll most often find mustard seeds, citrus, herbs & garlic. However, I've added cinnamon sticks & ancho chili peppers. The result? A bit of smokiness & hint of woodiness. It's truly divine.
