Spicy Miso Eggplant
Sometimes 4 ingredients is all you need to make a dish to remember, and this spicy miso eggplant proves it. The key is using ingredients, like miso, which are already super flavorful on their own. The sauce here is just 3 ingredients: miso for the salt and umami, gochujang for the spice, and mirin for the sweet. We’re hitting alllll those notes. Serve this as a side dish with any Asian-inspired meal, preferably with a lot of rice. To keep this on the healthier side, feel free to use less oil and roast or air fry the eggplant, or even steam it!
