
Khao Suey
My mouth waters just at the thought of this meal...yet another Ahmad family favourite! We've been making this recipe for a while...but it wasn't until the summer of 2023 that I actually had the authentic version at a Burmese restaurant in Cali. The restaurant is insanely good, so I was pretty chuffed when I realised that their Khao Suey tastes just like ours! Brrrop brop! Giving credit where it's due: this recipe was adapted slightly from the one which Rabia auntie so kindly shared. Please note that in the original recipe, the coconut curry is actually doubled. We have never had the need for that but feel free to try it if you want to make a more soupy meal. (I think this is actually supposed to be a soupy noodle dish you eat in bowls.) This makes 2 dinners for our family of 5.
