If you like nutty flavors like brown butter and ground almonds, then the Financier is for you. Moist, with a crisp exterior, they're wonderful with a cup of tea or coffee. Like many traditional french pastries, these were originally made by nuns, and were a delicious way to use up egg whites. The name Financier comes from the traditional shape, resembling a bar of gold.
