Mung Bean Cakes (classic and Coconut Flavored)

by rachel_loaf ⏱ 9 hr 16 ingredients 12 steps

These "cakes" are more akin to a halva or other similar confections than an actual fluffy cake. They're made by shaping mung bean paste into shapes using a mooncake mold. Though a traditional wood mooncake mold might work here, I wouldn't recommend it and instead would recommend sticking with plastic mooncake molds which can easily be found online (I have some linked in my Amazon shop). These cakes are somehow rich and light at the same time and go great with a cup of tea. An added bonus: as far as desserts are concerned, they're on the healthier side, too. Each recipe listed makes 4-5 cakes depending on how big you make them, and the recipes can be scaled easily.
