The ingredients in this Turkish breakfast dish look, at first glance, like a western omelet, minus the ham. But a few seasonings and cooking technique differentiate this egg dish and make menemen taste entirely different from its Rocky Mountain doppelganger. Using smoked hot paprika, oregano, and slightly spicy green chiles plants this firmly in the eastern Mediterranean. And by cooking the vegetables until very soft and gently cooking the eggs until creamy, this is very different from an American-style scramble. The texture, in fact, reminds me of Taiwanese-style tomato eggs. This would be a perfect candidate for breakfast for dinner.
