kuku-piaz
“Kuku” is a term for a Persian frittata. You’ve probably heard of the most popular one, kuku sabzi–an herb frittata. Kuku sabzi overshadows all the others in the public spotlight. It’s delicious, but my favorite is this one right here, kuku piaz. It’s a caramelized onion frittata with spices like saffron, turmeric, and cumin. It’s delicious and so easy to make! My favorite way to eat kuku piaz is with some toasted bread–and don’t judge me for this–a littttleeee bit of ketchup.
Ingredients
0.5 tsp saffron, crushed and brewed in 2 ice cubes
3 large onions, thinly sliced
8 large eggs
