This was my first time tying this flavor packed Lao crispy rice salad, and y’all, I’m not kidding when I say that this has to be one of the best salads I’ve ever had! The textures and flavors are all there- the seasoned rice balls are tender on the inside and crispy on the outsides, creating the perfect base for the salad. Then you have the aromatics and fresh herbs, roasted peanuts and vegan fish sauce and lime to season the salad perfectly! Plus, it vegan, gluten free and refined sugar free, but also PERFECT for meal prep (but it’s so good I’m not sure you’ll have any leftovers😏)
